You're probably in a Google account that doesn't own the channel. Check the account picture in YouTube Studio and use that account in Takeout. For a Brand Account, pick it from the account menu at the top of Takeout.
Google sometimes struggles with very large channels. Share whatever it produced and we fill in the rest.
